The essence of Premium wine is born in the vineyard

Our vineyard management philosophy emerges from a very close collaborative effort between our winemaker and our viticulturist to obtain perfect grapes with the specific natural characteristics required to obtain each style of wine, as defined by our customers throughout the world. Aromas, flavours, freshness, sweetness, alcohol, acidity, tannins, structure, body and balance, are just a few of the many naturals attributes that grapes bring into wine. Whatever was not obtained naturally in the vineyards, can not be invented or added artificially there after in the winery.

When we work our vineyards, we view each vine as an individual plan that needs special care to produce its best fruit. This individual vine is interacting with numerous external factors derived from the soil, the climate and other competing vegetal and animal organism. To be able to determinate and provide these individual vines, the attention and care they require, we have divided our vineyards into many small plots of land where we monitor weekly external factors such as soil, nutrients and humidity and measure individual plants nutrition and growth of vegetation, as well as the weight, shape and composition of individual grape bunches and berries. To this we add the climatic information.

This information is plotted and accumulated into maps of our vineyards and together with our extensive viticulture expertise and know –how, it enable us to take timely actions and decisions to influence and protect in the most natural way the evolution of each individual plant and its fruit through the harvest, to deliver perfectly healthy and balanced grapes, with all the characteristic required to produce an specific style of wine.

We define carefully the most appropriate time or harvest, including tasting of individual berries to asses balance and harmony of essential components for each individual plot, which then are harvested selectively to obtain each variety grapes with the precise attributes required to produce each grape.

Each bunch is cut exclusivity by hand and we carry them promptly to our winery, in small stackable cases, protecting them from any external damage until they are safely inside the winery to start processing.

Of course all information gathered throughout the viniculture cycle of each plate of vineyard and each grape variety harvested is passed on to the winery together with the grapes and is linked to further processing through bottling, this providing full traceability throughout the entire production cycle.
